Quick Verdict

I cooked this at 15 minutes and at 20 minutes and the consistency just don’t come out right. Thirty minutes is my number. At that point it softens, it breaks down a little, and it does everything I need when I’m having that pasta craving.

My Go-To Pasta for Low Carb Cravings

Pasta was the first thing off my plate when I went low carb, and it stayed off for years, until this one. 20g protein, 2g net carbs, and it actually fixes a craving rather than reminding you what you’re missing. You can see the Rotini Keto Protein Pasta Noodles on Amazon if you want to check the current price.

I keep it very simple. Boil, strain, red sauce, a little cheese if I have it, a little parsley or basil on top. That’s all you need really.

20g Protein, 2g Net Carbs, 26g Fiber

Twenty grams of protein, two grams of net carbs, twenty-six grams of fiber, that fiber number is doing double duty here. It’s what keeps the carb count low, and it’s also why this noodle needs 30 minutes in boiling water where a wheat rotini needs eight. The tradeoff is real, but it’s worth it.

Cooking instructions on the bag are simple enough. One bag, four quarts of boiling water, 15 to 30 minutes, then drain and add whatever you want. The range is the catch. Fifteen minutes and 30 minutes are two completely different noodles out of the same bag, and the bag doesn’t tell you which end you want.

I lean toward the extended version. At the 30 minute mark it starts to break down a little, it’s softer, and that’s where the consistency is right for me. Past 30 I don’t go. The rotini shape does a phenomenal job holding the sauce, which is really what I’m after when a craving hits.

Where It Falls Short

Cook time is 30 minutes minimum; the 15-minute range on the bag produces the wrong texture. Thirty minutes of boiling is not a weeknight-in-a-hurry food, and I learned that lesson by cooking it a couple of different times and getting the texture wrong. If you want pasta on the table in ten minutes, this isn’t it.

The other limit is flavor. This 3-pack is plain. They do make a variety pack with plain, roasted garlic and sun dried, and there’s a pesto and arugula one as well too. If you want flavor built into the noodle, you want that pack instead of this one.

How I Cook It, Start to Finish

Four quarts of boiling water, one bag in, timer at 30. Then I strain it out and that’s the whole cooking part.

The sauce matters as much as the noodle here. I use a Rouse brand pasta sauce because it’s lower in sugar and lower in carbohydrates, and I like red sauce on my pasta. No point spending 2g net carbs on the noodle and then dumping a high-sugar jar on top of it. That’s the part of a low carb protein pasta recipe people skip.

I use the roasted garlic version of that sauce two ways. On the pasta, and as the base when I’m making a cauliflower pizza. Spread it around, a little cheese, a little green on top, done.

Which Pack To Buy

Start with the plain 3-pack if red sauce is your thing. Three 8 oz bags is enough to sit in the pantry and cover a few craving nights without going stale on you. If you cook more varied dishes, the variety pack with roasted garlic and sun dried gives you more to work with.

One thing on pricing. This one bounces around a lot. It’s sitting right around its normal level for the last three months, but it has dropped well below that before, so check the live price rather than assuming. It’s ranked #8,344 in Grocery & Gourmet Food with more than 1,000 bought in the past month, so it’s moving. Check today’s price on Amazon before you commit to a multi-pack.

Pros

  • 20g protein and 2g net carbs per serving, which is what lets it onto a low carb plate at all
  • 26g fiber per serving
  • The rotini shape holds red sauce really well
  • Simple cooking: one bag, four quarts, drain, sauce
  • Three 8 oz bags per pack for pantry stock

Cons

  • The 15 to 30 minute range on the bag is misleading. At 15 and at 20 the consistency just don’t come out right
  • Thirty minutes of boiling is slow for a weeknight
  • This pack is plain only. Flavors require the separate variety pack

Frequently Asked Questions

Can I cook a bag ahead and reheat it for meal prep?

I cook it fresh when a craving hits rather than batching it, so I can’t tell you how it holds in the fridge for days. Given it softens and breaks down at the 30 minute mark, I’d cook a little shy of 30 if you plan to reheat.

Does the plain pasta taste like cardboard?

No, and that’s why it’s my go-to. It’s a plain noodle, so it carries whatever sauce you put on it rather than bringing a strong flavor of its own. The rotini does a phenomenal job with a red sauce.

Does one bag feed a family or one person?

Each bag is 8 oz and the cooking instructions treat one bag as one batch in four quarts of water. I cook a single bag when I’m fixing a craving. For a family dinner you’d be cooking more than one.

What sauce should I pair it with to stay low carb?

Pick a red sauce that’s lower in sugar and carbohydrates. I use Rouse brand for exactly that reason. Most standard jarred sauces will put more carbs on the plate than the noodle itself.

Half a star off purely for the cook time. The bag says 15 to 30 and the 15 end produces a noodle I wouldn’t serve. Skip it if you need dinner in ten minutes. Put the right cook time on the bag and print “30” and this is a five.

Give it the full 30 minutes and a low-sugar red sauce, that’s the whole recipe for making this work. I’ve cooked it a dozen times now and the craving stays gone after a bowl, which is more than I can say for most keto substitutes. The 30-minute cook time is the only real ask, and it’s worth it.
